Setting up as a producer of malted barley in the Po Valley was not easy given that cultivation in Italy is mainly concentrated in the centre and south of the country. After various attempts and some failures, we found a variety that could do well in our climate, with its severe winters and wet springs.

The sowing of the 2011 barley crop began in October 2010 over an area of around 2 hectares and came to fruition in June 2011 with the harvesting of 12.4 tons of dry barley.
Obviously, the cleaning and preservation of the caryopsis are of fundamental importance for the quality of the malt and so (under the blazing sun and with an eighty-year-old machine) we selected only the best grains.
